Chen Kenmin, a Chinese native from the Sichuan area, spent time honing his skill in Taiwan, Hong Kong, and China before settling in Yokohama, Japan. He founded Shisen Hanten in 1958, utilizing his knowledge of Sichuan cuisine. His eldest son, Chen Kenichi, received his legacy from his dad and went on to become one of Japan’s most renowned iron chefs. When Mak Kwai Pui and Chef Leung Fai Keung teamed together to create Tim Ho Wan, a small dim restaurant with just twenty seats, in Mongkok in 2009, they had previously worked as chefs at the Michelin three-star rated Lung King Heen in Hong Kong’s Four Seasons Hotel. They received a Michelin star the following year. The following branches all received stars. Tim Ho Wan was able to boast that it was the most reasonably priced Michelin-starred restaurant in the entire globe and no doubt with good reason. In 2013, the two chefs collaborated to launch the chain’s first overseas location in Singapore, duplicating the original recipes and, perhaps unavoidably, the frantic, congested setting.
